Brain-Boosting Berry Cardamom Chia Pudding

This colorful Brain-Boosting Berry Cardamom Chia Pudding combines several foods featured in the MIND Diet, including berries, walnuts, and seeds rich in fiber and healthy fats. A touch of cinnamon and cardamom addswarmth and flavor, while a spoonful of yogurt provides beneficial microbes to support the gut-brain connection. Simple and delicious!


Ingredients

  • 3 tablespoons chia seeds

  • 3/4 cup unsweetened soy milk (or milk of choice)

  • ½ teaspoon cinnamon

  • 1/8- ¼ teaspoon ground cardamom (a little bit goes a long way)

  • 1/2 teaspoon vanilla extract or real vanilla bean

  • ½ cup blueberries

  • ½ cup mixed berries of choice (raspberries, blackberries, strawberries, or cherries)

  • 2 tablespoons chopped walnuts

  • Optional 1-2 tablespoons unsweetened plant or yogurt of choice


Directions

  1. In a jar or bowl, whisk together the chia seeds, soy or milk of choice, cinnamon, cardamom, and vanilla

  2. Refrigerate until thickened (mixture can thicken in up to 30 minutes and will continue to thicken if left to set longer - but mixture is good anytime)

  3. Top with blueberries, mixed berries, and walnuts

  4. Optional: mix in spoonful of yogurt

  5. Enjoy!
