Heart Healthy Mediterranean Lentil Power Bowl
(Serves 2-4)
Ingredients
2 cups cooked lentils
4–6 cups arugula, spinach, or mixed greens
1 cup thinly sliced red cabbage
2 cups cucumber, chopped
2 cups cherry tomatoes, halved
½ red onion, thinly sliced
½-1 avocado, sliced (optional)
¼ cup fresh parsley or cilantro, chopped
¼ cup fresh sprouts of choice
Creamy Lemon Tahini Dressing
2 tbsp tahini (adjust to taste)
2 tbsp fresh lemon juice
1–2 garlic cloves, minced
3–5 tbsp warm water (to thin)
Fresh black pepper
Optional: 1 tbsp extra virgin olive oil
Optional: pinch cumin or smoked paprika or other spice of choice
Directions
Add greens and cabbage to a large bowl or platter.
Layer lentils, cucumber, tomatoes, onion, avocado (if using).
Whisk dressing until smooth and creamy.
Drizzle over bowl just before serving. Toss lightly.
Top with fresh herbs and sprouts
